Introduction :
Sodium alginate is a kind of linear macromolecule carbohydrates extracted from brown seaweed,consisting of α - L - Mannuronic acid and β - D - Guluronic acid.FA02 is a kind of sodium alginate getting from improving the process based on ordinary sodium alginate,owning good acid resistance and gel strength.t is widely used to thicken jams and other products,moreover,improving product quality significantly.

Application : Dedicated Jam
Advantages :
1. Having good acid resistance when pH<3;
2. Having very strong abilities of absorbing and retaining water;
3. Having certain gel properties.Also,the formation of the gel has un-thernal reversible;
4. Having lower cost comparing to jam using pectin.
Usage :
Raw Material : Flesh200g,water 200g,sugar 200g,sodium citrate 1.2g,FA02 1.4g.
Heating and concentrating:
1. Blending the flesh,100g sugar and 100 water in the pot to heating and boiling 20~30 min.
2. Mix FA20 and sugar 100g,then dissolved in 100g water.
3. When solids reaching to 55%,add sodium citrate.
4. Mix well.
Dosage:
Recommended addition level is 0.3%-0.8%,the specific amount can be adjusted according to the requirements of quality jam.
Note:
When dissolving,the powder should be sprinkled slowly into stirred water to prevent the dissolved difficulties such as powder “hold together”.Or FA02 can be expanded with soluble dry ingredients like sugar in order to speed up the dissolution rate,to prevent that phenomenon.
