Introduction:
Sodium alginate is a kind of linear macromolecule carbohydrates extracted from brown seaweed,consisting of α - L - Mannuronic acid and β - D - Guluronic acid.We can provide different specification,to apply for different kinds of jam.
Standard : GB1886.243-2016
Application : Spread jam;solidified jam.
Advantage :

2. Spread jam : Easy to smear.Solution is a paste of bright color,resistant to high temperature and baking;
3. Solidified jam : Having certain gel properties.Also,the formation of the gel has thermal irreversible.
4. Having great synergistic interaction with other hydrophilic colloids.
FM80 : Having basis thickening properties,applying to different kinds of jam.
FA02 : Having certain gel properties,applying to the spread jam (pH<3.5).
ZC10 : The viscosity (1% ) can reach 5000mPa·s,for the gelling jam (pH<3.5).
FH40 : The viscosity (1%) can reach 4000mPa·s,for the gelling jam (pH<3.5).
Usage :
Tack part of water in the list of jam ingredients to dissolve into sodium alginate gel (glue concentration between 2%-4%,too high will cause difficult in dissolving),evenly pour the gel into the jam at the late boiling period,cooking them together till the jam finished.
Dosage:
Recommended addition level is 0.3%-0.8%,the specific amount can be adjusted according to the requirements of the quality jam.
