Sodium Alginate in Popping Boba
Introduction :
Poping boba,also known as magic beans,fruit juice is wrapped in a thin membrane,the film will be broken after being squeezed by the mouth,then it’ll spill sweet juice.The material used to make this film is sodium alginate.
Sodium Alginate is a kind of natural linear macromolecule carbohydrates extracted from brown seaweed.It consistis of α - L - Mannuronic acid and β - D - Guluronic acid.The content of M segment is high,the gel property is good toughness, poor rigidity,soft and elastic; The content of G segment is high,the gel property is poor toughness,good ragidity, crisp.By adjusting the gel strength,the gel can be a different texture for beads and other explosive.

Technological process :
1. Ingredient preparation
For inner core: water,sugar,glucose syrup (80),xanthan gum,guar gum,citric acid,calcium lactate or calcium chloride,edible essence,edible pigment,preservative(potassium sorbate)
For outer layer: water,sodium alginate.
2. The production of inner core
2-1 : Dissolve xanthan gum and guar gum into 0.5% solution separately;
2-2 : Prepare a mixed solution : the grape syrup:xanthan gum:guar gum = 1:2:2;
2-3 : Add about 0.3% citric acid to regulate sugar acid ratio,also,sugar or concentrated juice can be chosen;
2-4 : Add 0.5-1% calcium lactate or calcium chloride,then mix well;
2-5 : Add appropriate amount of edible essence and pigment,stir well.
3. The production of outer layer :
Choose 400-500mPa·s sodium alginate and dissolve it into 0.7% solution.
4. Process operation:
Put the inner core into a container filled with solution of outer layer evenly,standing 3-5 seconds,and then remove it.
